4 medium potatoes-cubed (I prefer red potatoes but any kind should work)
1/4 of an onion-chopped into small pieces
1-2 boneless skinless chicken breasts-cubed
1/2 tsp. pepper
1/4 tsp. garlic powder
1/2 tsp. seasoned salt
1/4 tsp. paprika
1/4 tsp. crushed red pepper flakes (optional)
1 tsp. hot sauce
3 tbsp. butter
1/2-3/4 cup of shredded cheese (I used medium cheddar but you can use whatever you like!)
First things first. Cut up the potatoes, onion, and chicken breasts and place all in a mixing bowl. Now add the spices and hot sauce. Cut the butter into small pieces and add to the bowl. Give it all a good stir until the spices are evenly distributed over the potatoes. Now spray a baking dish with a bit of cooking spray and pour the potato mixture into the pan.
Oh and by the way, if you don't already have a pair of these (see photo below) you should buy some ASAP. I believe that this is probably the best three dollar kitchen gadget investment that I have ever made. I used to hate cutting up chicken with a passion because it took so long when using a knife. Using kitchen shears enabled me to cut up chicken in a snap! Thanks to my sister-in-law, Abby, for that tip! Don't know why I never thought of it before. :)
The last step is to cover the whole pan with aluminum foil and bake at 375 degrees for about an hour and a half or until the potatoes are soft and the chicken is cooked all the way through.
Silly me! I forgot to take a picture of the finished product but you get the idea. Now all that's left to do is add your favorite toppings and enjoy!

Ham or bacon (or both!)
Chopped green onions
Chopped white or yellow onions
Ranch dressing (or just the seasoning)
Whatever else you can find in your refrigerator
